Hi there, Nutmeg. A half slice of processed cheddar cheese is served on our battered filet of Alaska Pollock, garnished with our creamy and tangy tartar sauce and served on a steamed bun. Any more cheese would throw off the balance of flavour and overpower the delicate taste of whitefish. It's actually considered bold to serve cheese on fish! No cheese on fish is one of the rules of Italian cuisine. We've never played by the rules, but all of the risks we take with our recipes are calculated to make you say, "yum".
